If you all didn’t know, I have a zoo of animals at my house. I have two dogs, three cats, and three guinea pigs. My oldest animal is my beloved Yorkie, Tiki. When I was 18-years-old, my mother adopted this sick, Yorkie puppy from a pet store a few weeks after she gave birth to my little brother. Shortly after adopting Tiki, my mother realized it was a little difficult to run a business, while caring for a newborn and a puppy.
One night when I was at her house, she let me take Tiki into my life forever. He was small enough to fit into both palms of my hands. Not only was Tiki tiny and adorable, but my mother also purchased outfits for him, like a fly-fishing vest and hat.
Ever since then, Tiki and I have basically been inseparable, and he is my everything. We traveled together around the country to places like Idaho, Colorado, New York, and New Jersey. I would fill my car with dire necessities until there wasn’t any room left except for Tiki. He has been by my side through many heartbreaks, but I could always count on coming home to Tiki’s wiggling, nubber-tail and gentle kisses. Tiki is still going strong and healthy at over ten-years-old, and we are still creating adventures together.
Because Tiki and his health means so much to me, we decided to try Purina’s new Beneful IncrediBites. I was inspired to develop a recipe for the boyfriend and me through this new Beneful Chicken IncrediBites formula with spinach, carrots, and sweet potato. Since we are trying to eat healthier around here, this was a great mixture of foods for nutrition. Just to be clear, we didn’t eat the dog food, and the dogs didn’t eat our food.
For dinner, I decided to:
1. Simmer chicken tenderloins with a little olive oil and pepper covered with a lid for about five or six minutes, or until the chicken is cooked all of the way through.
2. Soak the sweet potatoes in water for several hours to make them easier to slice and cut them into tiny, bite-sized pieces. Drizzle olive oil on a cookie sheet, put the pieces of sweet potato scattered around the center, and sprinkle with sea salt. Cook for about 20 minutes.
3. Make a side salad of spinach with fine-peeled slices of carrot all drizzled with olive oil.
1 pkg. spinach
1 large carrot
1 pkg. chicken tenderloins (about 7 or 8 pieces)
2 medium sweet potatoes
